CHEST TO CHEST NATIONAL BRISKET CHAMPIONSHIP
Attention all smoker’s!!!!
I would like to know who cooks the best brisket?
It’s plain and simple and I would like to know who is the “Best of the Best” at cooking brisket.
Welcome to the Chest to Chest VII National Brisket Championship Cook-off which will be held on February 25, 2012 here in Great Bend, Ks. The cooks meeting will be on February 24, 2012 at the Armory Building located west of Great Bend on the Expo Complex Grounds at 8:30 p. m. We will be using standard clam shell boxes for turn ins. New for 2012 judging will be held in 2 stages. The first round turn-ins will be judged at 2:15 pm using KCBS scoring, with the top 3 scoring teams from each table selected for a championship round judging. Any tie scores for 3rd or 4th at the table, both teams will move forward. The second round of scoring will use a new set of specially selected judges and use our Chest to Chest championship scoring system. Each judge will score every team’s entries, for appearance each judge will score ONLY 1 entry as a 10, the brisket they think looks best to their eyes. We will then score all the other entries up to a 9.9 for appearance. Taste and tenderness will then be scored by all judges using a scoring range from 2 to 10, using one decimal place. (ie 9.3). This method “should” prevent any tie scores from complicating the results. Following the first round the top 3 teams from each table will be notified that they are moving into the championship round and will need to prepare another box for championship round judging. This turn in will be at 3 pm, and we will need you to try to get enough meat in the box for 12 judges, if you turn in 6 slices we will cut them in half for enough for each judge. If you do burnt ends, if possible 12 individual pieces would help speed the scoring. NOTE: This means you will need to prepare enough brisket for 2 separate entries to be judged in the championship round. Not all teams will move to the championship round.
I understand this is a change from years past but feel with the possible number of teams who enter it gives the ability to have our selected judges score each championship entry.

To the Reserve Champion of this head to head competition, the following prizes will be claimed

CHEST TO CHEST NATIONAL BRISKET RESERVE CHAMPION on a plaque, and the chance to defeat the champion in 2013.
